Salad in a Jar (For the Busy Mom Of Course)

So I was trying to find a way to eat better at lunch and save time in the process.When looking for something that would not take too much time I stumbled upon salads in a jar. The selling point for me was that people had claimed that you could make them all one Sunday and they would be good all week. Now we all know that this is not always the case with salads or veggies. The second thing was that I could not find a recipe that worked for me (despite all of the other people that have this posted on blogs and Pinterest.) Now there are many different types of these but I needed something that I would like to eat all he time. Now I have many people asking me to make it for them. What is in my wonderful lunch well I am going to tell you what is in the salad and also how to make it step buy step.

It all starts with the salad dressing: Cilantro Lime Vinaigrette (My own recipe)
This one was trial and error at first but now I have it down.
  1. 1 Jalapeno
  2. Cilantro (One bunch)
  3. 1/2 cup Lime Juice (I get it already bottled) 
  4. 1/2 cup organic rice vinegar
  5. 1/2 cup olive oil 
  6. Garlic
  7. Salt and Pepper to taste 
Blend it all in the blender and you are done

This is also the first thing you add to your mason jars.

















You want to make sure that all of your veggies are chopped and ready to go this makes everything go a lot quicker.I drain the black beans before you start chopping so that they are ready to go when you start to put the salads together.

Next you are going to add the black beans this is a great source of protein and will definitely fill you up.and then all of your crunchy veggies. Radishes, sweet peppers, cucumbers. If there are other crunchy veggies such as carrots (which I despise).
Next you are going to add your lettuce then tomatoes I use cherry tomatoes.
Last I add green onion, then cilantro and cheese on top.
And a paper towel....this grabs the moisture from the lettuce and keeps everything crisp.
Lastly seal the jar and put them into the fridge you are ready for the week ahead.





ALL DONE!!! Just a note you might want to take a plate or I use a plastic pasta bowl to dump my salad into its a hefty and filling salad.
